Takumi is the only Melbourne Japanese restaurant that offers Wagyu beef. Wagyu is a premium grade cut of beef that is second to none. The meat is so tender and juicy it melts in your mouth. Rediscovering Grilled Pizza

America’s favorite food has long been the pizza cooked in a
traditional oven but is that about to change? While most
Americans have probably never indulged in a grilled pizza, the
origins of pizza are making a big comeback. There is no denying
that we love our traditional backyard barbeque but rarely, if
ever has the barbeque included grilling a pizza. Despite the
seemingly odd combination of grill and pizza, the grill is the
ideal tool for cooking pizza and in fact is deep in the origin
of pizza making. The high, dry heat is ideal for a nice crisp
crust and the flavor provided from your grill will on a whole
new world of backyard grilling.

Before the word pizza was ever used, Greeks and Romans used
wood-fired brick ovens to prepare the original version of pizza
- flatbread. In ancient times each diner was given a piece of
flat bread along with a piece of meat on the bread. This food
was eaten with the fingers with an occasional knife to cut the
meat. Little did they know that this would eventually spark the
creation one of the America’s favorite foods.

Grilled Pizza Techniques:

Ingredients: 1 teaspoon dried yeast 1 tablespoon soy oil 1
teaspoon sugar cup warm water (110F) 1 cup bread flour 1
tablespoon soy flour 1 teaspoon salt

Instructions: Combine yeast, sugar and cup very warm water in
bowl, let sit for five minutes. Combine flour and salt in bowl.
Mix yeast mixture with bowl containing dry ingredients. Add a
little extra flour if dough is sticky. Knead for a good 10
minutes. Put into a greased bowl and let rise for 60 minutes
until it doubles in size. Turn out onto a floured surface then
knead lightly until smooth. Roll out into a ” thick, 12″
diameter circle. The thinner the dough is rolled, the better.

Before placing your crust on the grill, be sure that your grill
is both clean and well oiled. This will help prevent the dough
from sticking to the grill. You will need something large enough
to transport your dough to the grill. A pizza spatula is highly
recommended for this task. Brush an even coat of extra virgin
olive oil on the side that will be facing down first. The oil
will introduce flavor and help to keep the dough from sticking
to the grill as well as giving the crust a nice crisp finish.
Before placing your pizza on the grill, you may want to remove
the top rack of your grill to make it easier to flip your pizza.
Cook the first side from 1-3 minutes before flipping depending
on the heat of your grill. During this time you will need to
brush olive oil on the side that is facing up. While cooking the
first side, peak under the edge of the crust to monitor its
finish. Cook until you are satisfied with the finish and then
flip your crust over. After flipping, immediately apply any
topping that you would like. It’s highly recommended that you
keep the topping very light, as they will not have a chance to
cook on the grill without burning the crust. You may consider
precooking certain ingredients such as meats and thick
vegetables. Be sure to lower the lid as soon as possible to trap
the heat in and finish cooking the toppings. Cook the pizza for
an additional 2-3 minutes or until you are satisfied with the
crust’s finish.

You are now ready to experience one great pizza with deep
tradition. Cut your pizza into triangle shaped slices or try
cutting them into 1″ wide strips. This shape is great for a
party snacks!

Swordfish, How To Buy, Store, Cook And Enjoy.

Swordfish belongs to the group of fish that have recently become more appreciated for their contribution of omega-3 essential oils to the diet. These fats, which have to be provided by the diet, have now been shown to have a host of health giving benefits including combatting rheumatoid arthritis, heart attacks, high blood pressure, clogged arteries, psoriasis, asthma, inflammatory bowel disease, multilple sclerosis and even mirgraine headaches. Doctors and nutritionists now recommend three portions of fatty fish per week to get the full health giving benefits. Other fish which are also beneficial include, tuna, salmon, mackeral, sardines and boquerones.

Swordfish is found in both the Atlantic Ocean and the Mediterranean Sea and forms quite a large part of the Mediterranean Diet, which is said to be so healthful.

Swordfish- Buying and Storing.
When buying swordfish pick fish that is a white to pinkish-beige, if it is tinged with brown it is a sign of an off flavour.Swordfish does have a dark meat, along with the white, but this should be cherry red not brown.

As with all fish it is best eaten on the day of purchase but if you need to store it then first wash and pat it dry before placing on a cake rack over a shallow pan filled with crushed ice and refrigerate. All fish deteriorates if allowed to sit in its’ own juice.It will store well like this for up tp 2 days. Swordfish can be frozen for up to 2 months but be sure to defrost slowly and thoroughly before cooking.

Swordfish- Preparation and Cooking.
The secret to successful swordfish cookery is not to overcook it.Whichever cooking method you use your swordfish will be cooked when its flesh becomes opaque yet is still moist on the inside. It is best to cook skinless fillets, steaks or chunks as the skin is tough and strong tasting.

Baking.
Place swordfish in a greased baking dish or wrap in oiled foil and place on a baking sheet. Brush with melted butter, season with salt and pepper or cover with a piquant sauce, and bake in a medium oven for about 20 minutes.

Grilling.
Place steaks or kebabs on a well greased grill pan and place under the grill for about 6-10 minutes, turning once.

Pan frying.
Fry the swordfish in butter or olive oil, turning once. Cook for about 4-8 minutes until the fish is opaque and moist on the inside.

Stir-frying.
Cut swordfish steaks into bite size pieces and coat in wholemeal flour. Stir fry gently and briefly in hot olive oil and then add to your favourite stir fired vegetables.

Poaching.
Place enough water in a large frying pan to cover the fish, add seasoning of choice, dill is good. Bring to the boil then add the fish, cover the pan and simmer for about 8 minutes.

Grilled Swordfish (serves 4)

Ingredients.
4 swordfish steaks.
1/4 cup lemon juice.
2 tbs. water.
1tbs. olive oil.
2 cloves of garlic, crushed.
1/3 cup fresh chopped parsley.
Salt and freshly ground black pepper to taste.

Wash steaks and pat dry. Place in a large covered dish. Mix together all the above ingredients to make marinade and pour over the fish. Place in the refiregerator and marinate for at least one hour and no more than 12.

Oil the grill rack and place the swordfish under a hot grill for 4-5 minutes per side until fish flakes easily when tested with a fork.

Serve with sauteed potatoes and fresh green salad.

4 Ways To Avoid Looking Stupid When Making Small Talk

The fear of saying something silly and feeling embarrassed stops many of us from contributing more to discussions at work and when we are relaxing with friends.

And ironically the more we worry about it, the more tense we get and the more likely we are to say something stupid.

Let us a take a look at some remedies:

1. Learn to relax when you feel under pressure.

I often talk about the importance of managing your emotions

This is an essential skill.

There are a wide range of courses and books that you can refer to if you want to learn more about relaxation.

When you feel relaxed it is easier to think on your feet and to be flexible when you need to be.

2. Prepare Yourself

Before a social gathering get ready to have something to talk about.

With the internet on your PC there is no excuse for not becoming well informed about the world. The more knowledge you have the more conversations you can contribute to.

Make a point though of reading up on a variety of subjects otherwise your conversation topics will be limited to what interests you the most. And those topics may not interest your friends as much.

3. Become genuinely interested in other people

One of the big secrets to conversation power is to shut up! We are all a lot more interested in ourselves than in anyone else.

When there is a long silence encourage the other person to talk by asking questions and taking an active interest in the answers.

Take charge of the situation if you want the conversation to continue.

4. Stupid Statements Are Allowed!

If you say something stupid it is not the end of the world. If you try to hide your error then the situation can become chaotic very quickly.

It is far better to just admit that you made a mistake. Also, accept that even smart people say stupid things some times.

As long as you accept that you will make mistakes you have nothing to worry about. Expecting yourself to be perfect is unfair and just sets you up for failure.

All you need to do now is to decide how you will deal with these mistakes when they do happen.

5. Enjoy The Silence!

When there is a long silence in a conversation what normally passes through your mind? Do you judge it as bad? Do you feel under pressure to speak?

The other person has created the silence with you. Why not wait for him to speak first? Take the responsibility off your shoulders. It takes at least two people to have a conversation.

Finally, the reason silence can be uncomfortable is because you become self conscious. You become very aware of your own thoughts and feelings

There is one great way to deal with this. Put your attention on something outside of yourself by paying great attention to the other person and whatever is going on around you in the room.

Become fascinated by what you see and hear and you will forget about your own concerns.

Wine and Your Health

During the 1990s, a physician voiced on a national TV show that drinking red wine reduces heart disease. It made all the headlines. He cited the relatively lower levels of the disease in France despite their ever so famously high fat diets. Since that program, it seems that red wine health effects have been on the forefront of the wine consumer’s mind.

Good for the Heart

Coronary artery disease is caused by a build up of cholesterol in the arteries that supply the blood to the heart. If the arteries get partially blocked the heart cannot get enough oxygen and the result is pain. Does red wine protect against heart disease?

Many studies suggested that moderate amount of red wine (one to two glasses a day) lowers the risk of heart attack for middle aged people by 30 to 50 percent. It was also concluded that red wine may prevent additional heart attacks if you have already suffered from one.

The cholesterol that blocks these arteries is called low density lipo-protein or referred to as the bad cholesterol. This is cleared from the blood by high density lipo-proteins or the good cholesterol. Moderate wine consumption produces a better balance of these two. Additionally, wine has an anti-coagulation effect which makes the blood less likely to clot.

Red Wines

Chemical and food experts have known for years that wine contains rich deposits of vitamins, minerals, and natural sugars that are often beneficial to good health. Wine is also rich in potassium and low in sodium. Red wines have more of these elements due to the juices longer contact with the grape skins. Red wines are also rich in Vitamin B which comes from the grape skins as well.

Wine and Digestion

Wine aids in the production and flow of gastric juices. This facilitates digestion by breaking down the food in the stomach quickly and effectively. For many, after the age of 50 our bodies do not produce enough hydrochloric acid that are needed for digestion. So many doctors, including my own, have suggested a glass or two of wine with a meal. Who am I to complain?

Wine also has a tranquil effect on the body and helps people who have trouble sleeping. And it does not stop there as it may help lower the risk of developing dementia and Alzheimer’s disease.

Wine and Calories

As of now, there is no such thing as a diet wine. Unfortunately, there is no getting away from the fact that wine contains calories and calories make you fat if you do not burn them up. A glass of white or red wine contains around 100 calories. Sweeter wines that contain residual sugar as well as alcohol have more calories.

Final Thoughts

When you put everything together you may decide that a little bit of wine does you some good. Wine certainly has its place in a healthy lifestyle. That is my conclusion, and I am sticking with it!

Wine Tasting in Carneros

The Carneros AVA has become one of the premier regions of the
Napa Valley for wine tasting. Carneros is the closest wine
region to San Francisco, making it the first stop for many wine
tours through the Napa Valley.

Because of its proximity to the San Pablo bay, the day time
temperature is moderated by wind and fog from this body of
water. This makes for excellent conditions for growing Pinot
Noir and Chardonnay. Subsequently, some of the best American
sparkling wine producers are located in the AVA.

You do not have to be a wine expert to enjoy tasting in
Carneros. But since Carneros was awarded AVA status in 1980, the
number of resident wineries in has greatly increased. So with
limited time and budget, which ones do you visit?

No matter how prestigious the area is, no wine is guaranteed to
be good. There are so many factors that go into viticulture and
winemaking, choosing a wine based solely on the region is
basically a shot in the dark. The same can be said for deciding
which wineries to visit on a wine tour.

When planning a wine tasting tour, consider wineries that
produce the varietals you enjoy or would like to experience. For
example, if you want to taste Champagne style Sparkling Wines,
Domaine Carneros should be at the top of your list. This winery
is owned Taittinger Champagne House. Their stunning Chateau has
become a Carneros Landmark, and is among the most beautiful
wineries in Napa County. Domaine also offers a thirty minute
tour of their facilities, which culminates in their tasting room
with spectacular views of their vineyards.

For Pinot Noir aficionados, you cannot go wrong with Acacia
Winery. If you choose to visit Acacia, I would advise tasting
the 2002 Beckstoffer Pinot Noir; you will not be disappointed.

If you would like to taste a wider range of varietals, visit
Artesa Winery. They have produced several wines made with
several different grapes that have received 90 + points from
major wine ratings. This, along with their winery’s recent 10
million dollar renovation has made Artesa a premier destination
in Carneros.

Cline Cellars is also a pleasure to visit. Their tasting room is
a restored 1850’s farmhouse, and they have a picnic site on the
premises that overlooks their 350 acre vineyard. This makes
Cline Cellars a great place to taste wine and enjoy your lunch.

Aside from the wine itself, other pleasing aspects of tasting
experience lie in the beauty of the tasting room, winery and
surrounding landscape. Although it does not take a beautiful
setting to enjoy a great wine, it definitely adds to the
experience.

The taster’s overall experience is by far the most important
part of wine tasting. Most wineries in Carneros realize this,
and offer whatever they can to make your trip more enjoyable.
Many tastings will be hosted by a member of the winemaking team,
so they can answer questions and explain the subtleties of the
wines. Whichever wineries you visit, make sure to bring your
tasting room etiquette.

First of all, it is not advisable to bring children into the
tasting room. As far as the actual tasting is concerned, white
wines are generally poured first, followed by reds, and finally
desert wines. Within each of these, the lighter bodied wines
precede fuller bodied ones. Between each wine, it is common
practice to eat a cracker to cleanse your palate.

It is not necessary to finish each wine you taste; it is
actually discouraged, especially if you are planning to taste
many different wines. Wineries will provide jars to dispose of
any excess wine. Additionally, do not feel obligated to try
every wine that is offered.

If you ask for a second tasting, it is in good taste to buy a
bottle of wine. It is by no means necessary to buy wine when
tasting, but if you make an appointment with a smaller winery,
it is customary to make a purchase.

an excellent place to start your journey into what many people
describe as “heaven on earth.”
